The 02:00 provision order: yes, it happens, here's how we handle it
The middle-of-the-night requisition is the one that decides whether a chandler is real. A walk-through of what actually needs to be true.

A phone rings at 02:00. A vessel is arriving Douala at first light, the provisions the previous chandler was supposed to load did not arrive, and the Master needs a working delivery on deck before 09:00. Here is what has to be true for that call to end well.
The line has to be answered
By a human, not a voicemail. Our on-call phone is monitored 24/7/365. First response inside two rings, seven days a week. That is the entire premise.
The coordinator has to have authority
Whoever picks up at 02:00 has to be able to commit — to a price range, a delivery window, a substitute list — without waking anyone else. If the answer is "let me call you back at eight", the call has already failed.
The warehouse has to be actually stocked
A "24/7 chandler" who cannot access stock at 03:00 is a marketing claim, not a service. Our bond and warehouse are staffed with a night rotation and a key-holder available on-call. Fresh provisions we source from a vendor network with equivalent night coverage.
The paperwork has to run at 04:00
Customs entries for bonded stores require the customs office. That office is not always open at 04:00. For emergency bonded, we hold a small pre-cleared reserve on the shelf that can be released against a signed indemnity, with the formal entry filed at open. Every real chandler on this coast has some version of this.
The delivery has to arrive
A delivery van and a driver on rotation, briefed and moving inside an hour of the PO. Photo pack running as it would for a routine delivery — no shortcuts because it is dark.
What we deliver
On our best 02:00 calls, we have had fresh provisions and bonded stores on the gangway by 08:00 with a signed delivery note. The Master's morning is normal. That is the product.
