Why your cold chain dies in the last 200 metres: anchorage transfers in Douala heat
Everything upstream is chilled. Then a boat transfer at 32 °C undoes six hours of discipline. Here is how to protect the last leg.
Most cold-chain failures on West African deliveries do not happen in the warehouse or the van. They happen in the launch boat, between the port and the vessel at anchorage. Fifteen minutes on an open deck at 32 °C is enough to lift the core temperature of chilled protein above acceptance.
Why the last 200 metres is the hardest
Everything before the launch has controls: chiller trucks, warehouse chillers, packing SOPs. The launch does not. Once the totes are on the boat deck, they are exposed to sun, spray and heat. The clock is running and the Chief Cook is expecting stock that will keep for a week.
The four things that actually work
1. Pre-cool the totes. An insulated tote holds temperature for hours if it starts cold. If it starts at ambient, it holds nothing. We pre-chill totes in the warehouse before packing.
2. Ice pack ratio, not ice pack count. The right number of gel packs depends on the tote volume and the ambient. Rule of thumb we use for Douala anchorage: 15% of tote volume in pre-frozen gel packs, top and bottom.
3. Cover the deck stack. A silver thermal blanket over the tote stack on the launch deck is the cheapest 5 °C you will ever buy. We include one on every anchorage transfer.
4. Temperature log at handover. Probe the chilled tote at gangway with the duty officer watching. Record the reading on the delivery note. If it is out of spec, the crate is replaced from a bond stock, not argued about later.
The number to watch
On our anchorage transfers we log the delta between warehouse-out temperature and gangway-in temperature. Anything over 3 °C means the packing was wrong for the ambient. Anything over 5 °C means we replace and internally review. The Master should never be the person who catches this.
